In the cold waters of the Danish fjord, the Limfjord, the blue mussels grow slowly and develop a particularly fine taste and texture. Most are sent on to foreign kitchens, but we keep some for ourselves. These FANGST mussels are smoked over beech wood and preserved in cold pressed rapeseed oil.
