It comes from the clean sea shallows around the Hebrides and is harvested in spring, once the fierce Atlantic storms have abated. Carrageenan is an edible type of red seaweed and is carefully sorted after harvest. Aroma: Perfectly balanced fruity and green notes. Taste: Juniper, citrus and carrageenan seaweed.
