Here, between the end of May and the end of August, the milk of 130 cows, fed exclusively on Alpine grass, is transformed into a cheese with an authentic character and unmistakable taste. After an initial maturation period of one month in the alp, the forms are transferred to a maturation bunker, where they mature for at least 9 months. This process gives the
